Pepper stew is a common Nigerian comfort food recipe.

Ingredients:
2 large tomatoes
1/2 red bell pepper
1 habanero pepper
1/4 white onion
Cooking oil
Basmati rice
Salt
Garlic
Onion powder
Bay leaves
Turmeric
Thyme
Equipment:
Blender
Cutting board
Pot for simmering
Instructions:
Prepare two large tomatoes, half a red bell pepper, one habanero pepper, and a quarter of a white onion.
Add all these into a blender and pulse until smooth and integrated.
Coat the bottom of a pot with oil and bring to medium heat before adding the pepper mixture.
Season to taste with salt, garlic, onion powder, bay leaves (remember to remove these before eating), turmeric, and thyme.
Let simmer for 35 to 40 minutes, and then serve over basmati rice.
