Nigerian Pepper Stew

Pepper stew is a common Nigerian comfort food recipe.


Recipe contributed by a second generation Nigerian immigrant to Nashville, Miracle Awonuga.

 

Ingredients:

  • 2 large tomatoes

  • 1/2 red bell pepper

  • 1 habanero pepper

  • 1/4 white onion

  • Cooking oil

  • Basmati rice

  • Salt

  • Garlic

  • Onion powder

  • Bay leaves

  • Turmeric

  • Thyme


Equipment:

  • Blender

  • Cutting board

  • Pot for simmering


Instructions:

  1. Prepare two large tomatoes, half a red bell pepper, one habanero pepper, and a quarter of a white onion.

  2. Add all these into a blender and pulse until smooth and integrated.

  3. Coat the bottom of a pot with oil and bring to medium heat before adding the pepper mixture.

  4. Season to taste with salt, garlic, onion powder, bay leaves (remember to remove these before eating), turmeric, and thyme.

  5. Let simmer for 35 to 40 minutes, and then serve over basmati rice.
