Mandazi

Mandazi is the most common sweet snack in Kenya. It is used to accompany Chai/tea. It is a quick snack to share with a friend while chit-chatting over a cup of chai.


"Mandazi signifies friendship and sharing, it reminds me of the joy of family and community. It reminds me of many places I have visited, and I was welcomed with a cup of chai and mandazi. It reminds me of rich conversations I have shared with friends. It reminds me of my children joyfully asking me to make mandazi for them to enjoy and share with friends. Mandazi is an affordable sweet treat that can be eaten at any time, breakfast, dessert, and snack time etc. It signifies friendship and sharing. It is easy to make many mandazi and hence it is a dish that accompanies laidback friendly conversations."

Ingredients:

  • All-purpose flour – 3 cups

  • Baking powder 1 ½ teaspoon

  • Sugar- ½ cup

  • Warm milk – 1 cup

  • Oil, for frying - 1 can

Equipment:

  • Mixing bowl,

  • Rolling board

  • Deep frying pan

Instructions:

  1. Mix the flour, baking powder, and sugar

  2. Add some warm milk.

  3. Mix till the dough is soft, stretched, and easy to roll out.

  4. Knead the dough flat with little flour

  5. Cut out triangles

  6. Deep fry the dough, till it turn light brown
