Greek Pasta Salad

This dish is perfect for a family dinner! It's easy to assemble, delicious to eat, and great for left-overs too.


"When my parents, three siblings, and I are all at home together, this is one of our favorite meals to eat together. It's always requested by my sister or myself, and it's a staple in our house. Served warm, the feta cheese melts in the bowl with the chicken and cooked pasta. The combination of the zesty peppers and the Italian dressing make the pasta irresistible. We have taken this pasta any time we go to a dinner party or take a meal to a family friend, and it's always a success!"

Ingredients:

  • 1 box tricolor rotini noodles

  • 1 lb boneless chicken breasts

  • 1 bay leaf

  • 1 sweet bell pepper, chopped

  • 4 oz feta cheese, crumbled

  • 3 green onions, finely sliced

  • 1 package of Good Seasons Italian Dressing mix


Equipment:

  • Large serving bowl

  • Pot for cooking noodles and chicken

  • Cutting board


Directions:

  1. Cook noodles according to package. Cook chicken as desired (fry, boil, grill, whatever is preferred!) and cover with 1 bay leaf for 30 minutes.

  2. Cut chicken into bite-sized pieces. Combine noodles, chicken, pepper, cheese, onions, and dressing in a large bowl.

  3. Serve warm or cold.
